This month, with a new job combined with a toddler and an online business, I kept the new meal simple.
And I also made it up myself! It’s roasted potatoes with a coating of olive oil and flour to crisp them up (I parboiled them first then smashed them around in the pan a bit before coating them, more surfaces to crisp up!), and it has spinach, feta and pine nuts tossed through it, along with some nearly caramelised red onions. Will definitely be making this again. It is the best sort of carbohydratey-comfort in cool weather.
