Meals for April and May

I realised on the very last day of April that I had forgotten to try out a new recipe for the month! I had very little in the house and was feeling stumped. Then it occurred to me that there are three meals in a day, I don’t always have to make a new dinner!

Granola from scratch was the answer. I slow toasted rolled oats with honey, vanilla, raisins, apricots and coconut. Tasty. And very easy!

Then I was more organised and tried out a risotto for May. I sort of winged this one. It was meant to be a mushroom risotto but I didn’t have any mushrooms. Hmm. So I threw in some green things from the fridge and grated in a bit of lemon zest (too much actually!). It was not too bad.
